The Limoux Appellation South of Carcassonne is normally famous for its sparkling wines. However, their white wines made with Chardonnay offer a new option, and their Burgundy-style whites offer remarkable value. Dr Jacques Abet is firmly convinced of the health-giving benefits of wine and recommends (just as we do) aeration of the wines before drinking.
