Domaine des Aubuisieres - Vouvray
Bernard Fouquet, who runs the Domaine des Aubuisieres in the Heart of Vouvray, produces year after year Cuvée Silex and the more demanding Cuvée Marigny. Both wines are made with 100% Chenin Blanc.The wines are dry but not sharp and possess a certain complexity with a distinct double taste with an initial false impression of semi-sweetness immediately followed by a drier and longer finish. The Cuvée Marigny is slower to develop but over a few years will have the extra dimension on the Cuvée Silex. In practical terms drink the silex within 4 years and the Marigny after 4 years.
