The grapes are harvested at good maturity, and are entirely destemmed. Vatting lasts for 10 to 15 days and provides a great tannic structure, which allows ageing and guarantees a good stability. After the fermentation, it is aged for approximately 7 months before being bottled.
The vines are grown around Villedieu, a small medieval village located in Vaucluse, in the Southern part of the Rhone Valley. Most of them are planted on well-exposed slopes overlooking the Aygues Valley, and are cultivated organically with the greatest respect to the lands in order to ensure excellent quality.
