Vinification |
Harvested on reaching maximum maturity, the grapes are sorted and undergo a first fermentation at a strictly controlled temperature of 30°c. After pressing and fining by egg-white, it is left to mature for a year to 18 months before bottling. |

Chateau Anniche
The vineyards of Chateau Anniche cover an area of 80 hectares, from which the Pion family has produced wines since the Napoleonic era, and, until 1914, even made their own barrels for transporting the wines.
They now try to combine modern scientific techniques with traditional methods in order to mediate with nature and the elements.
