Fermented with natural yeasts that bring out the true character of the grapes themselves without artificially accentuating specific traits. Fermented in the tank, but held on the lees 7 to 8 months before bottling, twice as long as other Picpouls.

They are proud upholders of the Picpoul tradition (the name derived from the French 'Picque', meaning sharp, and 'poul', meaning lip, translating as 'lip stinger'), and strive to make the truest and most expressive variety in the Languedoc region.
