Vinification |
After gentle pressing and clear settling, the musts are vinified in barrels and tuns, without new oak between 16°C and 18°C, then aged on the lees and stirred until the desired smoothness is obtained. Gaillard are very vigilant to the risks of oxidation on their sensitive grape varieties, in order to preserve the fruitiness and the freshness of this wine as well as possible. |
