Vinification |
The grapes are hand-picked, pressed and placed in vats for a cold maceration before the alcoholic fermentation. The wine is then raised in vats for 12 months to retain all its freshness and liveliness. Racking is carried out 3 times during this period. The wine is bottled after fining. |
