Ondenc
Ondenc is a rare white grape variety traditionally associated with the Gaillac region in south-west France. Once more widely planted, including in Bordeaux, it fell out of favour due to its low yields and susceptibility to rot. However, in recent years, there has been a modest revival of interest in the grape, driven by producers seeking to preserve regional heritage and reintroduce lesser-known indigenous varieties.
Capable of producing both dry and sweet wines, Ondenc is more commonly associated with dry styles today. The wines are typically full-bodied with naturally high acidity, offering a structured and refreshing profile. Aromatically, Ondenc tends to display citrus notes alongside hints of orchard fruit, and in some cases, subtle floral or honeyed characteristics, particularly when made in sweeter styles.
When served chilled, Ondenc wines are well suited to a variety of dishes. Their acidity and body make them a good match for white meats such as chicken or pork, as well as fish and seafood. As interest in historic grape varieties continues to grow, Ondenc is gradually re-emerging as a distinctive and characterful component of south-west French winemaking.
