Ugni Blanc
Ugni Blanc (also known as Trebbiano) is a white grape variety originating from Italy, but it is most widely associated with France, where it plays a crucial role in the production of Cognac and Armagnac. The grape is valued for its high yields and its ability to produce simple, fresh wines, which are often used as a base for distillation or in blends with other varieties.
Ugni Blanc is characterised by its high acidity and low sugar levels, resulting in light, crisp, and relatively neutral wines. These qualities make it particularly well suited to distillation, as the resulting base wines retain freshness and stability throughout the process.
In terms of food pairing, Ugni Blanc-based wines work well with light, simple dishes. They pair particularly well with seafood such as sardines and crayfish, as well as savoury dishes like pancakes, where their acidity helps to balance richness and enhance flavour.
