Fer
A speciality of the Marcillac appellation in south-west France, Fer—also known as Fer Servadou, Braucol, or Mansois—is a traditional red grape variety with deep regional roots. It is widely planted in areas such as Aveyron and Gaillac, where it has long been valued for producing wines that reflect the character of the local terroir.
Fer typically produces medium-bodied red wines with firm tannins, moderate alcohol, and vibrant acidity. It is known for its distinctive aromatic profile, showing notes of cassis, redcurrant, and blackberry, often accompanied by herbal or lightly peppery nuances. In Marcillac, wines made from Mansois can display a fresh, slightly rustic character that contributes to their individuality.
The grape’s structure and acidity make it particularly well suited to food pairing. It complements robust dishes, especially those with smoky or chargrilled flavours such as barbecued meats, grilled sausages, and roasted game, as well as spiced cuisine.
