Semillon
Sémillon is a golden-skinned white grape variety originating from Bordeaux, where it remains a cornerstone of the region’s white wine production. Although it is now grown worldwide, its most celebrated expressions still come from France, particularly in Bordeaux’s dry and sweet wine appellations. The grape is especially prized for its role in producing some of the world’s finest sweet wines, including those from Sauternes and Barsac.
Sémillon is known for its relatively low acidity and rich, waxy texture, which gives the wines a rounded, full-bodied mouthfeel. In sweet styles, particularly those affected by noble rot (botrytis), it develops complex flavours of stone fruit such as apricot, peach, and nectarine, alongside notes of citrus, honey, and nuts. In dry wines, often blended with Sauvignon Blanc, it contributes body, softness, and subtle aromatic depth.
In terms of food pairing, Sémillon is highly versatile. Sweet styles pair beautifully with fruit-based desserts, as well as savoury dishes such as foie gras. Dry or lightly oaked Sémillon works well with white fish, particularly when served with rich sauces like hollandaise, as well as poultry and dishes featuring nuts or subtle sweetness. Its texture and flavour profile make it a rewarding partner at the table across a range of cuisines.
