Vinification is carried out in temperature controlled stainless steel tanks. According to the land, macerations last from 10 to 15 days. With the temperature maintained the malolactic fermentation takes place just after. After aging in stainless steel vats, the bottling is done in the cellars.
Presently the domain of la Bessière represents 15 hectares mainly composed of Saumur-Champigny, but also of Saumur blanc and Saumur brut. As an Independent winemaker in the Saumur-Champigny region, all wines are made in the deep caves in limestone. Quite rare, Thierry Dézé develops his own Saumur Brut.
