Cognac and Calvados

Cognac is the classic breed of brandy, with commonplace production beginning around the 17th Century in the Cognac region of France just north of Bordeaux.

Brandy of Cognac must be aged a minimum of 2 years (compte 2) represented by *** or VS, followed by VSOP at 4 years old (compte 4) up to a maximum age of 6 years (compte 6) XO, at which point the brandy is perceived to have gained all the benefits it can from the cask and is transferred to glass carboys for further ageing.

Due to it's primitive form of distillation, Cognacs tend to be lighter and more aromatic.

    Composed of 40% Fine Bois, 40% Petite Champagne and 20% Grande Champagne. This cognac spends 8 months in new oak barrels to extract soft and light aromas, then in red barrels. It reveals fruity (apricot, lychee and orange zest), floral (acacia and jasmine) notes, slightly spicy with ginger and softened by vanilla.

    This Cognac is made from Grande Champagne, 1er Cru de Cognac. This unique terroir, who is a guarantee of quality, is enhanced by the single Estate production. It is a subtle balance that makes it exclusive and authentic. The Very Superior Old Pale (VSOP) is a blend of Cognacs of different ages, the youngest of which has spent at least 5 years in oak barrels. Its colour with amber nuances leads to delicate floral aromas intermingled with vanilla.
