Colombard
Colombard is a French white grape variety, believed to be a cross between Chenin Blanc and Gouais Blanc. It is widely used to produce inexpensive, fresh white wines in regions such as Bordeaux and the South West, particularly in the Côtes de Gascogne.
Naturally high in acidity, Colombard is well suited to blending, often paired with varieties such as Sauvignon Blanc or Ugni Blanc to enhance freshness and structure. While it was once used in the production of Cognac, it has largely been replaced by Ugni Blanc, which is better suited to distillation.
In terms of style, Colombard produces crisp, light-bodied wines with bright citrus flavours, often showing notes of lemon, grapefruit, and green apple. These refreshing characteristics make it a good match for lighter dishes, including white meats, seafood, and fresh cheeses.
