Limoux

Founded quite recently in 2003, The Limoux AOC vineyards, located around the town of the same name in the foothills of the Pyrenees are higher than any other in Languedoc, the cooler air causing a distinct change in the grape-growing that sets it apart from other appellations in the area.

The region is particularly famous for it's sparkling wines, in turn claiming to have produced the first in France, mentioned in papers written by Benedictine Monks in 1531, long before Champagne became world-renowned for it's own. Domaine de Cassagnau is also famous for their sparkling wine, however they also produce small quantities of whites and reds under the Limoux title.
