Savagnin
Savagnin is an ancient white grape variety native to the Jura region in eastern France, where it plays a central role in the area’s distinctive wine styles. It is not to be confused with Sauvignon Blanc, despite the similarity in name. Savagnin is considered one of the oldest grape varieties still in cultivation and is the parent of several important grapes, including Traminer and, indirectly, Gewürztraminer.
In the Jura, Savagnin is best known for producing unique wines such as Vin Jaune, a traditional style aged under a layer of yeast (known as voile), similar to the flor ageing seen in some Spanish wines. This ageing process gives the wine its characteristic oxidative profile, with flavours of walnut, spice, and dried fruit. Savagnin is also used in the production of ouillé (non-oxidative) wines, which preserve more of the grape’s natural freshness and acidity, showing notes of citrus, green apple, and minerality.
Savagnin thrives in Jura’s cool, continental climate and limestone-rich soils, which contribute to its structure and longevity. The wines are typically high in acidity and can be quite structured, making them well suited to ageing. Although production remains relatively small, Savagnin is highly regarded for its ability to express terroir and produce wines of remarkable character, often paired with regional specialities such as Comté cheese, poultry in cream sauces, and mushroom-based dishes.
