César
A rare, ancient red grape variety native to northern Burgundy, grown mainly around the Yonne in the Auxerre and Irancy areas. Deeply coloured and highly tannic, it is traditionally used in small proportions to add structure, colour, and ageing potential to Pinot Noir-based wines, most notably in the reds of Irancy. Robust and rustic in character, it is increasingly scarce today, cultivated on only a handful of hectares.
