Vermentino
Vermentino is a Mediterranean white grape variety with thin skins and a preference for coastal vineyards influenced by cooling sea breezes. Although not among the most widely planted grapes globally, it produces some of the finest white wines in Europe, particularly in Italy and southern France.
Vermentino is known for its crisp character and ability to retain attractive acidity throughout the growing season, making it ideal for producing refreshing, light-bodied wines. The History of the Vermentino Grape Variety
Vermentino’s exact origins remain uncertain, as it has been cultivated around the Mediterranean Basin for centuries. The grape is known by several names depending on the region, including Pigato in Liguria, Favorita in Piedmont, and Rolle in southern France.
Some evidence suggests the grape may have arrived on the Mediterranean coast from the Middle East during ancient Greek expansion. Other theories propose it was introduced later from Spain, around the 14th century, when Spanish influence extended across several Mediterranean islands, now part of Italy and France.
DNA profiling has revealed that many white grape varieties grown across Europe are, in fact, genetically identical or closely related to Vermentino. However, further research is still needed to fully understand its origins and development. With at least two dozen known synonyms, Vermentino stands as one of the oldest and most widely dispersed grape varieties in the Mediterranean.
Wine Regions
In France, Vermentino is primarily grown in the south. It is the most widely planted white grape in Corsica, where it is often labelled under Vin de Corse AOP and Patrimonio AOP. These wines share similarities with those produced in nearby Sardinia. Vermentino is also permitted in the production of rosé in Provence and appears in white wines from Bellet AOP. Across southern France, particularly under the IGP Pays d’Oc designation, producers make approachable, good-value wines from the grape.
In Italy, Vermentino is widely cultivated in regions such as Liguria, Tuscany, and Sardinia. Liguria is home to several appellations specialising in the grape, including Colli di Luni, where it is sometimes referred to as Pigato. Cinque Terre is another notable source, producing both dry and sweet passito styles. While not the dominant white grape in Tuscany, Vermentino has gained popularity, particularly in coastal areas near Bolgheri, where it produces some of the fuller-bodied expressions. In Sardinia, it is the leading white grape and is commonly labelled under Vermentino di Sardegna and Vermentino di Gallura.
Vermentino has also shown promise in the New World and is now successfully cultivated in regions such as Australia, California, and South Africa. Its adaptability to warm, coastal climates has contributed to its growing international presence.
Wine Styles & Tasting Notes
Vermentino is a noble grape variety with deep-rooted traditions across the Mediterranean coast and islands. Its adaptability allows it to be used in several wine styles, each offering a distinct expression. The following are the most typical styles produced with Vermentino:
Dry White Vermentino – The most common style, typically fermented in stainless steel, producing a crisp, dry wine with bright acidity, mineral notes, and flavours of citrus, orchard fruit, and subtle herbs.
Vermentino Superiore – In certain Italian regions, particularly Sardinia, producers craft more concentrated expressions from riper grapes. These wines tend to have higher alcohol, greater depth, and increased complexity compared to standard Vermentino.
Vermentino Passito – When grapes are partially dried before fermentation, they produce sweet wines with a rich, complex bouquet and a well-balanced palate. These dessert wines offer concentrated flavours while retaining freshness.
Sparkling Vermentino – Although relatively uncommon, Vermentino can be used to produce sparkling wines thanks to its natural acidity. These wines are typically light, elegant, and refreshing.
Rosé – In Provence, where Vermentino is known as Rolle, it is sometimes included in rosé blends alongside varieties such as Grenache, Tibouren, and Syrah. It contributes freshness and aromatic lift to the region’s characteristically dry and refined rosé wines.
Food Pairings
Vermentino is a late-ripening, thin-skinned grape capable of producing wines in a variety of styles. Most commonly, it is fermented dry in stainless steel, resulting in a crisp, refreshing wine with excellent versatility at the table.
It pairs particularly well with white fish such as halibut, cod, sole, and flounder. Its citrusy acidity also contrasts nicely with the richness of oily fish, including salmon, tuna, mackerel, sardines, and eel.
Vermentino has a natural affinity for vegetarian dishes, from stir-fries to noodle-based plates, and can balance the sweetness in fruit salads. Its bright acidity complements vegetable dishes and can even cut through vinegar-based dressings. Shellfish—including shrimp, crab, prawns, and lobster—as well as grilled octopus, oysters, and mussels, pair exceptionally well with the wine.
The grape’s fresh, zesty profile also makes it a good match for fried foods, such as battered fish, calamari, and breaded shrimp, where it helps balance oiliness. Vermentino is equally enjoyable on its own, making it an excellent choice as a refreshing aperitif, particularly in spring and summer.
