Vineyard. Uses High Environmental Value Farm products in production
Winemaking. Maceration for 15 days, moderate pumping over to avoid over-extraction. Fermentation at low temperature (27° maxi). Pneumatic pressing. Very low sulphur content (SO2) during breeding, maintained at 16 mg/l during breeding.
Situated in the beautiful South-West of France, Bordeaux is one of the country's largest wine-growing areas, covering over 125,000 hectares. With the Atlantic to the west, its coastal temperatures are moderated by the Gulf Stream, making it an ideal place for vines to thrive. The region produces a staggering 900 million bottles a year, ranging from large quantities of common Vin de Pays to some of the most prestigious and expensive wines in the world.
An historic Right Bank appellation in Bordeaux, set around the town of Bourg-sur-Gironde where the Dordogne and Garonne meet, and first planted by the Romans, who made it a major wine-exporting hub. Recognised as an AOC in 1936, it is dedicated overwhelmingly to red wine, with nearly 4,000 hectares of red varieties and only a small amount of white. The reds are built chiefly on Merlot and Cabernet Sauvignon, producing full-bodied, fruit-forward wines with ripe dark fruit and firm structure, while its small white output comes mainly from Sauvignon Blanc.
