Traditional Burgundy vinification in stainless steel vat after pneumatic pressing. Native yeasts. Partial ageing in oak barrels which allows micro-oxygenation and gives roundness. Natural malolactic fermentation.

Chateau de Dracy
Château de Dracy is a family estate located in Couchoisin the south of the Côte de Beaune. The wines are vinified in the 18th century vat room and cellar located next to the medieval castle, built in 1298 then remodeled in the 16th century (construction of the dungeon), 18th century (vat room and cellar) and finally in the 19th century. The castle archives contain documents attesting to the presence of vines since the 15th century. The estate belongs to the Charette family and was recently taken over by Quentin de Charette.
