Winemaking. Manual harvest, sorting in the vineyard. De-stemming 50% to 100% depending on the year (separation of logs from the cob/stem). Maceration and alcoholic fermentation of varying length depending on the vintage, with monitoring by an oenology laboratory. Aged for 12 months in oak barrels (aged 3 to 6 years), followed by 8 to 10 months in vats.

Region – Burgundy

The region of Burgundy, also known as Bourgogne, has a rich and opulent history. In the fourteenth and fifteenth centuries, the Grand Duchy of Burgundy reached as far as Belgium and the North Sea, becoming renowned for its riches, culture, and wine. Building on vineyards planted by the Romans and later cultivated by medieval monks, the region established a winemaking legacy that endures today. Despite being geographically small, Burgundy produces some of the most expensive and sought-after wines in the world, its limestone soils lending them a uniquely appetising minerality that sets a Burgundy apart from its peers.

Appellation – Mercurey Premier Cru

The top tier of the Mercurey appellation, the largest and best-known in the Côte Chalonnaise in southern Burgundy. Its 32 Premier Cru climats lie on well-exposed limestone and clay slopes, producing predominantly red wines from Pinot Noir, with a smaller amount of white from Chardonnay. The reds are firm and structured, showing red-fruit character, earthy depth, and good ageing potential, while the whites are rich and rounded.
