This wine has been vinified at a low temperature. Then it was stirred each week for a month, and after it spent about ten months in oak casks.
In Sury-en-Vaux, a little village near Sancerre, the 'big chief' (according to his wife Karine), Christian Lauverjat produces quality Sancerre wines year after year. The Sancerre appellation produces mostly whites, but reds and rose wines made with Pinot Noir are also produced by this domaine.
