Vinification Mechanical harvesting with a sorting of the grapes in the vineyard before the passage of the harvesting machine if necessary. The harvest is crushed and destemmed then pressed at low pressure. The clarified must will ferment in temperature-controlled stainless steel vats at 18°C. Aged on fine lees in temperature-controlled stainless steel vats.
